The bananas make my banana bread really soft and moist, almost like cake.
Ingredients:
1 3/4 cups unbleached wheat flour
4 overripe bananas, mashed
2 eggs
1/2 cup sugar
1/4 teaspoon salt
2 teaspoons baking soda
1/4 teaspoon baking power
1 teaspoon vanilla extract
1/3 cup vegetable oil
1/2 cup water
Method:
Preheat oven to 350°F
Lightly grease an 8″ loaf pan
In a large bowl, combine all ingredients and mix well
Pour mixture into greased pan
Bake for 50 minutes
