Soft and chewy!
Ingredients:
2 cups bread flour
1 teaspoon dry yeast
1 cup warm water
1/4 cup vegetable oil or olive oil
1/8 cup sugar
1 teaspoon vanilla extract
1/4 cup raisins, divided into 4 equal portions
1 square cake dish, oil coated
Method:
Preheat oven to 325°F
In a large bowl, combine flour, yeast, water, oil, sugar and vanilla extract to for a sticky dough
Cover bowl with plastic wrap for 10 minutes
Add 1 tablespoon oil to a small bowl
Transfer sticky dough to a kneading board
Smear a little oil in palms
Knead dough for 10 minutes, keep putting oil in palms while kneading
Place dough back to bowl
Cover bowl again and rest dough for 2 hours
Sprinkle a little flour on kneading board
Put dough on it and sprinkle a little flour on dough
Knead for 1 minutes
Divide dough into 4 equal portions
Mix 1 portion raisins with 1 portion dough
Shape each portion into a ball
Place balls in cake dish
Cover dish for 30minutes
Brush a little oil on balls
Put in oven and bake for 30 minutes
Serve warm or cold
