Cantonese-Style Soy Sauce Noodles

This also tastes really good when cold!

Cantonese-Style Soy Sauce Noodles

Ingredients:

  • 1 lb dry egg noodles

  • 1 bundle green onions, cleaned and cut into segments

  • 1 lb mung bean sprouts, rinsed

  • 5 tablespoons low sodium soy sauce

  • 2 tablespoons sweet soy sauce or dark soy sauce

  • 2 teaspoons sugar

  • 2 tablespoons oil

  • Roasted sesame seeds



Method:

  1. In a large pot, fill water 3/4 full and bring to a boil over medium high heat

  2. Add noodles and stir constantly to loosen noodles

  3. Boil noodles for 3 minutes

  4. Turn off heat

  5. Discard hot water

  6. Rinse noodles with cold water

  7. In a large pan, heat oil over medium high heat

  8. Add green onions and stir a few time

  9. Add noodles, soy sauces and sugar and stir for 3 minutes or until noodles are fully cooked

  10. Add bean sprouts and stir well

  11. Sprinkle sesame seeds

  12. Serve warm
