Crispy and not too oily!
Ingredients:
1 lb pork chops (about 3-4 slices), flattened both sides with stainless steel meat tenderizer
8 cloves fresh garlic, peeled and finely minced
1 tablespoon soy sauce
1/2 teaspoon salt
1 tablespoon sugar
1 tablespoon cooking wine
1/4 teaspoon white pepper powder
1/2 teaspoon 5-spice powder
3 tablespoons + 1/2 teaspoon corn starch
3 tablespoon water
Method:
1. In a large bowl, combine pork chops, garlic, soy sauce, salt, sugar, wine, pepper powder, 5-spice powder, 1/2 teaspoon corn starch and water and mix well
2. Cover bowl with plastic wrap and leave in refrigerator over night
3. Before cooking, add 3 tablespoons corn starch to bowl. Make sure pork chops coated evenly
4. Heat 5 cups of oil in pan over medium high heat
5. Stick a wooden chopstick or a bamboo stick in oil to test temperature. If bubbles appear at the tip, oil is ready
6. Add pork chops to oil and fry until golden
7. Serve warm
