Light, fluffy, and moist!
Ingredients:
1 cup all-purpose flour, sifted
1 tablespoon instant coffee powder
2 eggs
1/2 cup vegetable oil
1/2 cup brown sugar or white granulated sugar
1/2 cup water
2 teaspoons baking powder
Aluminum foil
Method:
Preheat oven to 325°F
In a blender, blend coffee powder, oil, eggs, sugar and water in low power for 2 minutes
Pour mixture in a big bowl
Add flour and baking powder and mix well
Transfer mixture to an oil coated cake dish
Cover dish with aluminum foil and bake 25 minutes
Discard aluminum foil and bake for another 5 minutes
Serve warm
