Coffee Cake

Light, fluffy, and moist!

- Ingredients: 
- 1 cup all-purpose flour, sifted 
- 1 tablespoon instant coffee powder 
- 2 eggs 
- 1/2 cup vegetable oil 
- 1/2 cup brown sugar or white granulated sugar 
- 1/2 cup water 
- 2 teaspoons baking powder 
- Aluminum foil 
Method:
- Preheat oven to 325°F 
- In a blender, blend coffee powder, oil, eggs, sugar and water in low power for 2 minutes 
- Pour mixture in a big bowl 
- Add flour and baking powder and mix well 
- Transfer mixture to an oil coated cake dish 
- Cover dish with aluminum foil and bake 25 minutes 
- Discard aluminum foil and bake for another 5 minutes 
- Serve warm
