Great for breakfast or when feeling ill (it's easy on the stomach)!

Dried Scallop Porridge With Peanuts

Ingredients:

  • 1 cup uncooked white rice, rinsed

  • 6- 7 dried scallops, rinsed

  • 1/4 cup shelled raw peanuts

  • 1 sheet dry tofu skin, crumbled

  • 10 cups water

  • 1/8 teaspoon chicken flavor broth mix

  • 1/2 teaspoon sugar, optional

  • 1 teaspoon salt, can be adjusted



Method:

  1. Combine all ingredients in a large pot with lid on over medium high heat

  2. Bring to a boil and turn heat to medium low

  3. Cook for 10 minutes and stir occasionally to prevent burning at bottom

  4. Turn off heat

  5. Do not open lid

  6. 30 minutes before meal, turn heat back on and bring to boil

  7. Turn heat to medium low and cook for 20 mins

  8. Serve warm
