French Onion Soup with Baguette

Ingredients:

  • 8 large yellow or sweet onions, halved and sliced

  • 2 bay leaves

  • 1 teaspoon olive oil

  • 1 teaspoon sugar

  • 4 cups beef broth

  • 4 cups water

  • Salt to taste

  • Sliced Mozzarella cheese

  • Toasted baguette, sliced



Method:

  1. Heat a large pot over medium high heat

  2. Add oil, onion, bay leaves and sugar

  3. Stir constantly until tender and caramelized but not burnt

  4. Add beef broth, water and salt

  5. Bring to a boil

  6. Turn heat to low and cook for 10 minutes

  7. Turn off heat

  8. Heat oven to 325°F

  9. Ladle soup into an oven safe bowl

  10. Put a piece toasted bread in bowl and topped with a slice mozzarella cheese

  11. Bake until cheese bubbles and browns slightly

  12. Serve hot



Toasted Baguette:

  1. 1 baguette, sliced

  2. Arrange slices in a single layer on baking sheet

  3. Brush slices with olive oil

  4. Bake in 325°F oven until slightly brown, about 15 minutes
