Perfect for a cold evening!
Ingredients:
8 large yellow or sweet onions, halved and sliced
2 bay leaves
1 teaspoon olive oil
1 teaspoon sugar
4 cups beef broth
4 cups water
Salt to taste
Sliced Mozzarella cheese
Toasted baguette, sliced
Method:
Heat a large pot over medium high heat
Add oil, onion, bay leaves and sugar
Stir constantly until tender and caramelized but not burnt
Add beef broth, water and salt
Bring to a boil
Turn heat to low and cook for 10 minutes
Turn off heat
Heat oven to 325°F
Ladle soup into an oven safe bowl
Put a piece toasted bread in bowl and topped with a slice mozzarella cheese
Bake until cheese bubbles and browns slightly
Serve hot
Toasted Baguette:
1 baguette, sliced
Arrange slices in a single layer on baking sheet
Brush slices with olive oil
Bake in 325°F oven until slightly brown, about 15 minutes
