Fried Rice Noodles With Egg & Sausage
Fried Rice Noodles With Egg & Sausage

Ingredients:

  • 1 1lb bag dried rice sticks, soaked in cold water for 40 minutes

  • 6 eggs, beaten + 1/2 teaspoon salt

  • 1 1lb bag bean sprouts, rinsed and cleaned with cold water

  • 4 hot link sausages, cut into bite-sized chunks, or your choice of meat

  • 1 tablespoon oyster sauce

  • 1 tablespoon oil

  • Salt to taste

  • Roasted sesame seeds



Method:

  1. Drain rice sticks

  2. Heat oil in wok over medium high heat

  3. Add eggs and stir until cooked

  4. Transfer eggs to plate for later use

  5. In the same wok, add sausages and stir until oil releases

  6. Add rice sticks and oyster sauce

  7. Stir constantly until rice sticks become soft and cooked, about 7-8 minutes

  8. Add bean sprout and stir a few times

  9. Add eggs and stir evenly

  10. Add 1 teaspoon salt to taste

  11. Sprinkle sesame seeds

  12. Serve warm


NOTE: All ingredients can be found at Chinese markets. If you decide to use meat, marinate meat with soy sauce, sugar and corn starch 10 minutes before cooking.
