Fried Rice Noodles

With egg and sausage!

Ingredients:
1 1lb bag dried rice sticks, soaked in cold water for 40 minutes
6 eggs, beaten + 1/2 teaspoon salt
1 1lb bag bean sprouts, rinsed and cleaned with cold water
4 hot link sausages, cut into bite-sized chunks, or your choice of meat
1 tablespoon oyster sauce
1 tablespoon oil
Salt to taste
Roasted sesame seeds
Method:
Drain rice sticks
Heat oil in wok over medium high heat
Add eggs and stir until cooked
Transfer eggs to plate for later use
In the same wok, add sausages and stir until oil releases
Add rice sticks and oyster sauce
Stir constantly until rice sticks become soft and cooked, about 7-8 minutes
Add bean sprout and stir a few times
Add eggs and stir evenly
Add 1 teaspoon salt to taste
Sprinkle sesame seeds
Serve warm
NOTE: All ingredients can be found at Chinese markets. If you decide to use meat, marinate meat with soy sauce, sugar and corn starch 10 minutes before cooking.
