Crunchy on the outside, moist with onion bits on the inside!
Ingredients:
1 cup all-purpose flour
1/2 cup room temperature water
4 stalks green onion, trimmed and chopped
1/2 teaspoon five-spice powder
Salt
Oil
Method:
In a mixing bowl, combine flour, 1/4 teaspoon salt and water to form a dough
In the same bowl, knead dough for two minutes
Cover bowl with plastic wrap and rest dough for 10 minutes
Smear a little oil on a board
Take the dough out and knead on the board for 5-6 minutes until smooth
Put the dough back to the bowl
Brush a little oil on dough surface and cover bowl again
Rest dough for 1 hour
In another bowl, mix green onions, 1/2 teaspoon salt, five-spice powder and 1 tablespoon flour
Heat 3 tablespoons oil in pan over medium heat
Pour hot oil into the green onion mixture and mix well to form the filling
Divide dough into 4 equal portions and work one portion at a time
Use hands to roll each portion into a smooth ball
Use a rolling pin to roll the ball into a strip as thin as possible without tearing it, about 8-10 inches long
Spread 1/4 filling all the way to the end of strip
Roll up the strip from one of the long sides to form a rope
Gently pull the rope without breaking it
Coil the rope to form a flat circle
Tuck the end of the rope at the bottom of the circle
Heat 2 tablespoons oil in pan over medium heat
Fry pancakes until crispy on both sides
Serve warm
