Hong Kong-Style Potato and Fruit Salad

Ingredients:

  • 2 large potatoes – peeled, boiled and cut into bite-sized chunks

  • 4 hard boiled eggs – shelled and chopped

  • 2 cups frozen cut corn – scalded in boiling water for 20 seconds

  • 1 20oz can lychee – drained

  • 1 20oz can longan – drained

  • 1 15ox can fruit cocktail – drain

  • 4 stalks celery – cleaned and finely chopped

  • 1/2 cup vegenaise or real mayonnaise

  • 1/4 teaspoon salt, optional


Method:

  1. In a large bowl, combine all ingredients and mix well

  2. Put into fridge

  3. Serve cold
