The lychee and longan add so much rich flavor to the salad!
Ingredients:
2 large potatoes – peeled, boiled and cut into bite-sized chunks
4 hard boiled eggs – shelled and chopped
2 cups frozen cut corn – scalded in boiling water for 20 seconds
1 20oz can lychee – drained
1 20oz can longan – drained
1 15ox can fruit cocktail – drain
4 stalks celery – cleaned and finely chopped
1/2 cup vegenaise or real mayonnaise
1/4 teaspoon salt, optional
Method:
In a large bowl, combine all ingredients and mix well
Put into fridge
Serve cold
