Korean Daikon Soup

Light and delicate.

Korean Daikon Soup

Ingredients:

  • 3 medium daikon radish, peeled and cut into bite-sized pieces

  • 1 pound beef bones

  • 1 cup dried seaweed, soaked

  • 1 bulb garlic, peeled and crushed

  • 2 tablespoons soy sauce

  • water

  • salt to taste


Method:

  1. Boil beef bones in a pot water for 40 minutes to remove fat

  2. Discard water and clean the pot

  3. Fill the pot with 12-14 cups water

  4. Add remaining ingredients

  5. Bring it to a boil over medium high heat for 5 minutes

  6. Turn the heat down to medium low

  7. Keep cooking until daikon radish is tender, about 11/2 hours

  8. Serve warm


NOTE: Do not use sushi seaweed sheets in soups. Soup seaweed can be found in Asian grocery stores.
