Light and delicate.
Ingredients:
3 medium daikon radish, peeled and cut into bite-sized pieces
1 pound beef bones
1 cup dried seaweed, soaked
1 bulb garlic, peeled and crushed
2 tablespoons soy sauce
water
salt to taste
Method:
Boil beef bones in a pot water for 40 minutes to remove fat
Discard water and clean the pot
Fill the pot with 12-14 cups water
Add remaining ingredients
Bring it to a boil over medium high heat for 5 minutes
Turn the heat down to medium low
Keep cooking until daikon radish is tender, about 11/2 hours
Serve warm
NOTE: Do not use sushi seaweed sheets in soups. Soup seaweed can be found in Asian grocery stores.
