Authentic Indonesian fried rice.
Ingredients:
5 cups cold, cooked white rice
4 cloves garlic, minced
2 cloves shallot, minced
1/2 chili pepper, minced
3 stalks green onion, chopped
3 tablespoons oil
1/4 cup + 1 tablespoon sweet soy sauce
1 teaspoon Thai shrimp paste
A few drops fish sauce
Method:
Heat oil in pan over medium heat
Add garlic, shallot and chili pepper
Stir constantly until fragrance released
Add rice and stir a few times
Add sweet soy sauce, shrimp paste and fish sauce and mix well
Add green onions and stir a few times
Serve warm. Can be served with fried eggs, fried peanuts, tomato wedges and cucumber slices
