Pan-Roasted Potatoes

Pan-Roasted Potatoes

Ingredients:

  • 1 lb red or yellow potatoes, cleaned and cut in chunks

  • 4 cloves garlic, coarsely chopped

  • 1 teaspoon rosemary, fresh or dried

  • 1/2 teaspoon salt, can be adjusted

  • 1 tablespoon oil

  • 1 tablespoon water



Method:

  1. Heat oil in pan over medium high heat

  2. Add garlic and rosemary and stir until fragrance released

  3. Add potatoes and salt and stir a few time

  4. Turn heat down to medium low

  5. Cover pan and cook for 10 minutes, stir occasionally

  6. Add water and stir a few times

  7. Cover pan and cook for another 5 mins or until fully cooked and slightly brown

  8. Serve warm
