Sweet and extremely healthy!
Ingredients:
6 beets, peeled and cut into bite-sized pieces
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1 teaspoon salt
3-4 sprigs fresh thyme
juice of 1/2 large orange
Method:
Preheat oven to 350°F
Combine all ingredients and bake for 1 hour or until tender
Serve warm
