Preserved duck eggs are also known as "century eggs."

Ingredients:

  • 2 preserved duck eggs, shelled and cut into wedges

  • 1 red chili pepper, chopped

  • 3 garlic gloves, peeled and chopped

  • 1 tablespoon chopped cilantro

  • 1 tablespoon soy sauce

  • 1 tablespoon vinegar

  • 1 teaspoon sugar,

  • 1 teaspoon Sichuan chili oil

  • 1 tablespoon oil

  • Sesame seeds


Method:

  1. Place eggs on plate

  2. In a bowl, combine chili pepper and garlic

  3. Heat oil in a small pan over medium high heat

  4. Stick the end of a wooden spoon into oil to see if oil is hot enough

  5. Turn off heat if many bubbles form around the wood

  6. Poor hot oil onto chili and garlic

  7. Add soy sauce, vinegar, sugar and chili oil to the same bowl and mix well

  8. Pour mixture onto eggs and top with cilantro

  9. Sprinkle sesame seeds

  10. Serve cold
