A classic Chinese dish served with rice!
Ingredients:
6 large tomatoes, cut into wedges
8 eggs
4 cloves garlic, minced
4 tablespoons ketchup
3 tablespoons sugar
1/2 cup water
Oil
Salt
Method:
In a bowl, beat the eggs well with 1/2 teaspoon salt
Heat 3 tablespoons oil in wok over medium high heat
Add eggs and stir till cooked, about 1 minute
Pour eggs back to bowl and set aside
Use the same wok, heat 1 teaspoon oil
Add garlic and stir a few times
Add tomatoes, ketchup, sugar and water and stir well
Bring to a boil and cook for 5 minutes
Add eggs and stir a few times
Add salt to taste
Serve warm
