Stir-Fried Tomatoes With Egg

Ingredients:

  • 6 large tomatoes, cut into wedges

  • 8 eggs

  • 4 cloves garlic, minced

  • 4 tablespoons ketchup

  • 3 tablespoons sugar

  • 1/2 cup water

  • Oil

  • Salt



Method:

  1. In a bowl, beat the eggs well with 1/2 teaspoon salt

  2. Heat 3 tablespoons oil in wok over medium high heat

  3. Add eggs and stir till cooked, about 1 minute

  4. Pour eggs back to bowl and set aside

  5. Use the same wok, heat 1 teaspoon oil

  6. Add garlic and stir a few times

  7. Add tomatoes, ketchup, sugar and water and stir well

  8. Bring to a boil and cook for 5 minutes

  9. Add eggs and stir a few times

  10. Add salt to taste

  11. Serve warm
