Tomato And Egg Flour Noodle Soup

Ingredients for Hand-Made Noodles

  • 1 cup flour

  • 1/2 cup warm water

  • 1/2 teaspoon salt

  • Oil


Method for Hand-Made Noodles:

  1. In a bowl, combine flour, salt and water and mix well to form a dough

  2. Cover bowl and rest dough for 5 minutes

  3. In the same bowl, knead dough for 10 minutes until smooth

  4. Spread 1 teaspoon oil on dough

  5. Cover bowl and rest dough for 1.5 hours

  6. Transfer dough to kneading board

  7. Use rolling pin to flatten dough to 1cm thickness

  8. Cut dough into 1 inch strips

  9. Coat strips with oil completely and rest strips for 2 minutes

  10. Pick up one strip by holding each end

  11. Pull gently in opposite directions

  12. As the strip gets longer, bounce it against kneading board to help stretch further


Ingredients for Soup:

  • 3 tomatoes, cleaned

  • 3 eggs, beaten

  • 2 cups fresh spinach

  • 4 stalks green onion, chopped

  • 1 tablespoon soy sauce

  • 2 teaspoons oil

  • 7 cups of water

  • salt

  • Chili paste of your choice, optional


Method for Soup:

  1. Fill a pot with water and bring to a boil over medium high heat

  2. Turn off heat

  3. Use a knife to mark an X on the bottom of each tomato

  4. Place tomatoes in boiling water and soak for 1 minutes

  5. Remove tomatoes from pot and plunge them into cold water

  6. Discard hot water in pot

  7. Remove tomatoes from cold water after 1 minute

  8. Peel Off skin and chop finely

  9. In the same pot, add 2 teaspoons oil over medium high heat

  10. Add green onions and stir a few times

  11. Add tomatoes, soy sauce and 1 teaspoon salt and combine well

  12. Add 7 cups water and bring to a boil

  13. Add eggs and stir a few times

  14. Add noodles and cook for 5 minutes

  15. Add spinach

  16. Add more salt if needed

  17. Serve warm

  18. Add chill paste to bowl, optional
