Noodles are made by hand!
Ingredients for Hand-Made Noodles
1 cup flour
1/2 cup warm water
1/2 teaspoon salt
Oil
Method for Hand-Made Noodles:
In a bowl, combine flour, salt and water and mix well to form a dough
Cover bowl and rest dough for 5 minutes
In the same bowl, knead dough for 10 minutes until smooth
Cover bowl and rest dough for 1.5 hours
Transfer dough to kneading board
Use rolling pin to flatten dough to 1cm thickness
Cut dough into 1 inch strips
Coat strips with oil completely and rest strips for 2 minutes
Pick up one strip by holding each end
Pull gently in opposite directions
As the strip gets longer, bounce it against kneading board to help stretch further
Ingredients for Soup:
3 tomatoes, cleaned
3 eggs, beaten
2 cups fresh spinach
4 stalks green onion, chopped
1 tablespoon soy sauce
2 teaspoons oil
7 cups of water
salt
Chili paste of your choice, optional
Method for Soup:
Fill a pot with water and bring to a boil over medium high heat
Turn off heat
Use a knife to mark an X on the bottom of each tomato
Place tomatoes in boiling water and soak for 1 minutes
Remove tomatoes from pot and plunge them into cold water
Discard hot water in pot
Remove tomatoes from cold water after 1 minute
Peel Off skin and chop finely
In the same pot, add 2 teaspoons oil over medium high heat
Add green onions and stir a few times
Add tomatoes, soy sauce and 1 teaspoon salt and combine well
Add 7 cups water and bring to a boil
Add eggs and stir a few times
Add noodles and cook for 5 minutes
Add spinach
Add more salt if needed
Serve warm
Add chill paste to bowl, optional
