My daughter loves pairing my tuna melts with my other Asian dishes.
Ingredients:
1 can tuna, drained
2 hard boiled eggs, shelled and finely chopped
1 teaspoon dill
1/2 cup cut corn
1 tablespoon grated Parmesan cheese
2 tablespoons low fat mayonnaise
Salt and pepper to taste
2 pieces toast
2 teaspoons ketchup
Shredded cheese, your choice
Method:
Preheat oven to 375°F
Combine ingredients 1 – 7
Spread ketchup and mixture on toast
Sprinkle evenly with shredded cheese on top
Bake for 5 to 8 minutes
Serve warm
