Vegan Sweet & Sour Tofu

Best paired with white rice!

Ingredients:
- 1 box tofu, cut into 1”x2” chunks 
- 1/2 onion, cut into chunks 
- 1 8oz can pineapple, chunks 
- 2 tablespoon cornstarch 
- 10 tablespoons pineapple juice 
- 2 tablespoons ketchup 
- 1 tablespoon soy sauce 
- 1.5 teaspoons brown sugar 
- 1 cup oil 
Method:
- Dry tofu well with paper towel 
- Coat tofu with cornstarch 
- For sauce, combine pineapple juice, ketchup, soy sauce and brown sugar in a bowl and mix well 
- Heat oil in pan over medium high heat 
- Add tofu and fry until golden on both sides 
- Turn off heat 
- Transfer tofu to a plate 
- Pour hot oil into a bowl for later use 
- Add 1 teaspoon hot oil back to the same pan and heat over medium high heat 
- Add onion and stir a few times 
- Add sauce and bring to a boil 
- Cook until sauce starts to thicken 
- Turn off heat 
- Pour sauce onto tofu 
- Serve warm
