Best paired with white rice!
Ingredients:
1 box tofu, cut into 1”x2” chunks
1/2 onion, cut into chunks
1 8oz can pineapple, chunks
2 tablespoon cornstarch
10 tablespoons pineapple juice
2 tablespoons ketchup
1 tablespoon soy sauce
1.5 teaspoons brown sugar
1 cup oil
Method:
Dry tofu well with paper towel
Coat tofu with cornstarch
For sauce, combine pineapple juice, ketchup, soy sauce and brown sugar in a bowl and mix well
Heat oil in pan over medium high heat
Add tofu and fry until golden on both sides
Turn off heat
Transfer tofu to a plate
Pour hot oil into a bowl for later use
Add 1 teaspoon hot oil back to the same pan and heat over medium high heat
Add onion and stir a few times
Add sauce and bring to a boil
Cook until sauce starts to thicken
Turn off heat
Pour sauce onto tofu
Serve warm
