Hand-Shredded Chicken With Fresh Onion Oil

Taking our previously-made fresh onion oil to cook this chicken!

Ingredients:

  • 5 chicken drumsticks

  • 2 stalks green onions

  • Few slices ginger

  • 2 tablespoons shaoxing wine

  • 2 teaspoons aromatic onion oil

  • 1 tablespoon soy sauce

  • 1 teaspoon oyster sauce

  • 1 teaspoon sugar

  • Salt if needed

  • 1 cup ice

  • Water


Method:

  1. Fill pot with water

  2. Add drumsticks, green onions and wine into pot

  3. Cover pot with lid

  4. Bring to a boil over medium high heat

  5. Turn heat to medium low and cook for 30 minutes

  6. Turn off heat

  7. In a large bowl, combine some drinking water and ice

  8. Transfer drumsticks from boiling water to ice water and soak for 10 minutes

  9. Hand shred chicken and discard the bones

  10. Place meat on plate

  11. In a small sauce pan, combine aromatic onion oil, soy sauce, oyster sauce, sugar and 2 tablespoons water

  12. Bring to a boil over medium heat, stir constantly

  13. Pour sauce over chicken

  14. Serve cold
